Congratulation to chef Thomas Barthelmes from Finestkind and to the SMCC Culinary Arts team for their wins at yesterday’s Lobster Chef of the Year competition.
The judge selected Bathelmes as the 2025 Lobster Chef of the Year for his dish of Lobster Custard with poached lobster in XO sauce, young ginger, and crispy tempura.
The SMCC team were voted the People’s Choice for their dish of Madagascar Vanilla Butter-Poached Lobster with parsnip and potato croquette, sweet corn beurre monté, and peppery micro slaw.
